"Hidden" Cod

Makes 6 servings

Ingredients

  • 200g (7,05 oz)Leek
  • 150g (5,29 oz)Onions
  • 50g (1,76 oz) Olive Oil
  • 4 Salted Cod steaks or if you wish fresh Cod
  • 5 eggs
  • 15g (0,53 oz)Wheat Bran
  • 150g (5,29 oz) Milk
  • Salt Pepper

Traditional Preparation

Soak the salted cod in cold water to cover for 24 to 36 hours, changing the water occasionally, drain.
Flake the cod into small pieces, removing any bones. Set aside.
Preheat the oven to 200ºC/392ºF/gas 6.
In a large saute pan, over medium heat, add olive oil when the olive oil is hot, add the onions and the leeks (in slices). Season with salt and pepper. Saute until lightly golden, about 6 minutes. Add cod and saute for about 10 minutes.
Put in medium ovenproof casserole dish.
In a medium saucepan, heat the milk until just about to boil. Add salt, pepper, wheat bran and beaten eggs,stirring constantly. Place mixture over the cod.
Place in the oven and bake for de 20-30 minutes.

Thermomix Preparation

In TM Bowl put the leeks, onions and chop 6sec/speed 5. Add olive oil and cook 8min/varoma/speed 1.
Add cod and cook 10min/100º/reverse/speed spoon.
Put in medium ovenproof casserole dish.
In the TM bowl add eggs, wheat bran, milk, salt and pepper 30sec/speed5. Place mixture over the cod.
Place in the oven and bake for de 20-30 minutes.
