50g Olive Oil

4 Zucchini

500g (17.636oz) Minced meat

1 Onions

2 cloves Garlic

1 Tomato

30g Tomato Pulp

To taste Salt

To taste Pepper

50g Oregano

As needed Mozzarella Cheese

Instructions:

  1. Preheat the oven to 180ºC/350ºF/gas 4.
  2. Cut the top of the zucchini and scoop out flesh, leaving ¼ inch thick. Reserve the inside of the Zucchini.
  3. Place the zucchini in a microwave steam container and cook it.
  4. Chop the onions and garlic, put in a casserole-type dish along with the olive oil and cook for some minutes.
  5. Add the minced meat, the tomato, the tomato pulp, the inside of one zucchini, wine, spices and let cook for about 20 minutes.
  6. When cooking is complete, fill the zucchini with the cooked meat. Tear over the mozzarella.
  7. Cook in the preheated oven for 30–35 minutes until golden.
